I mainly play Gold/Silver - they're a little more fun than the R/B/Y games and Pearl confuses the hell out of me (too many to choose from!).
I haven't played in a while (blatantly cracking the old GBA out tonight) but my team was something like this:
1. Meganium
2. Dragonite
3. Hitmonchan
4. Ho-Oh
5. Lapras
6. Espeon
Took out the "tough stuff" pretty easily.
However I quite liked to field a slightly different version:
1. Meganium
2. Kingdra
3. Ho-Oh
4. Espeon
5. Magneton/Porygon/Rhydon
6. Scyther
Not *quite* as tough, but I think it's a little more fun. Quite a fan of the dual-types - but as this leaves the party a little weak to Electric attacks (3/6) I usually opt for Rhydon, though Porygon allowed the party to take on really tough stuff with Lock-On, Zap Cannon, Hypyerbeam (and the remaining one either something like Signal Beam or Recover).

Empoleon: Level 83 (Special Attack and Defense) - Not on my team for the challenge of it.
Raticite: Level 61 (Attack and Speed) - Joke Pokemon, I used this in the last tournament I went to.
