Well the title seems self-explanatory, mine would probably be tie between Oddworld and Skullmonkeys. That game had the greatest bonus room music ever.

FFVII and VIII are big ones for me. Parasite Eve was a huge amount of fun as well. Battle Arena Toshindin(sp.) II was a personal favorite fighter.

Tekken 3 - This game convinced me to get a PS1.
Psychic Force - Energy beams and floating arenas, it was EPIC.
Bomberman - Great multiplayer game.

A bit difficult to make a list when I've only played 6 playstation games, and 2 of those only on a PS1 emulator 
But the only game I have ever spend 4 years trying to find was a Playstation game, and that game is possibly my favourite Final Fantasy game, a game that now I've found it I'll never sell, throw away or even risk damaging: Final Fantasy 9
Now, 3 years after purchase, it's in the same condition as when I bought it.(of course, it's opened but there are no scratches and even the manual still smells new)

Does anyone remember Evil Zone? It was a very fun fighting game with characters ranging from a sword-wielding schoolgirl with a guardian angel to a Power Ranger to an ancient being in the body of a bubbly 8-yearold who attacks with ethereal hula hoops.
I have fond memories of that game, and its absurdly poor dubbing.
