Cowboy Bebop. Hands down, end of story. I hardly watch any anime to begin with but have seen a few. Dragon Ball Z was sort of a silly, fun guilty pleasure of mine. Outlaw Star was watchable when I was bored, but definitely had its defects. I also thought Ghost in the Shell: SAC was fairly decent. But nothing, and I mean absolutely *nothing* beats Bebop. The characters were believable as actual human beings that people could relate to, it had a great 'used future' look to it, and most importantly had an outstanding story that didn't rely on stupid gimmicks during its 26 episode (plus a movie) run. Don't even get me started on the awesome soundtrack.

It's a difficult tie between Angel Beats! and Full Metal Panic!...

Although Kanon, Elfen Lied, Toradora! And Naruto (We're saying favourite not best right?) each hold a special place in my heart.

Higurashi no Naku Koro ni and Higurashi no Naku Koro ni Kai (emphasis on the latter), without any contest.
They easily beat any other animé I have watched or own[footnote]My opinion. I simply love them to death, and the manga, and I am trying to get the visual novels :3[/footnote]. I love them <3
This. But I lean more towards the VN side.

I should probably note that i watch a lot of anime

The first anime i watched was shown to me by my brother when i was 6 years old, and it was
rated R+18, and it was called, "Ninja Scrolls". It was pretty sweet, still awesome. and i only got back into anime at the start of 2010, and i literally mean the start, 13 of January and i just started watching Gurren Lagann and realised, "F*ck it, anime obviously got a lot better and is the only thing that will pass the time in this dead end rural shit town i live in" (Crib Point, VIC, Australia)

Tengen Toppa Gurren Lagann is mine

Honorable Mentions go to Angel Beats, Highschool of the Dead, Toradora and a long list of others

I'd say ones that are finished Trigun (the only anime series I've seen all the way through three times), Cowboy Bebop (I can't believe this one because I really didn't care for it at first, and when I gave it a second try I loved it), and Elfen Lied.
My favourite current anime is high school of the dead.

my runner up is the orginal Full metal alchemist, because it's the anime that got me into anime about a year and a half ago.

I look forward to one piece the most out of the currently running anime.
For full series I have watched Samurai Champloo and Trigun are favourites of mine.
Also I'm part way though Tengen toppa gurren lagann at the moment looks like it could be a good contender once I'm finished watching.
