Your Go-To Foods For When You Lack Inspiration?

The title might sound a little weird, so let me explain what I mean with "inspiration".

For a few months now, I've got periods when I've completely lost a desire to eat lunch. It's not that I'm not hungry, I just don't feel like eating. This has led to me skipping lunch those days, which, coupled with really small breakfasts, really isn't the smartest thing to do when you're in school. Sometimes I even skip breakfast, which is even dumber, though I usually only do this when I'm at home.

I suspect this might be linked to me having periods of feeling extremely down for no apparent reason, but I think that it's also partially because I've got no inspiration to cook; I simply can't think of anything to make, and I'd rather go hungry than eat junk food or snacks.

This got me thinking; There are some foods that people resort to when they can't think of anything to cook. For example, whenever my dad doesn't know what to make for dinner, and I don't have a good suggestion, chances are that he'll make one of these two things: gratin or stew. For gratin, it's either fish, broccoli or kassler [http://en.wikipedia.org/wiki/Kassler] and potatoes and whatever leftovers he can find. For stew, it's either fish or beans. He's a good cook, but sometimes, it gets a little boring. But, it's not like I have any better suggestions...

Me? I generally cook with chicken when I lack inspiration. In the summer, it's grilled chicken and some kind of salad. Sometimes I make garlic bread, too. In the winter, it's curry or anything stew-like. My brother invented a chicken recipe with créme fraîche and orange juice, which tastes heavenly, so if we have juice, I'll probably make that.

So, tell me: What meals do you cook when you can't think of anything else? Alternately, which is your go-to ingredient?

Eggs

They're cheap so I always have them. There's a lot you can do with them so I get lots of variety. They're tasty so that makes me happy! They're easy to make so my laziness is of minimal factor. Lastly, they cook pretty quick, which is really nice (see "Laziness" above).

Did I mention they were cheap? That's a very important factor here.

Usually we always have something planned in advance for dinner, but if our plans rapidly change we usually default to "eat some leftovers".

Which kinda sucks, tbh. :(

Peanut butter stuff. In sandwiches, on toast, crackers, and everything in between. Not sure why, I guess it's because we always have some around.

Me too! PB&J on toast, PB with bananas, melted with chocolate, drizzled over ice cream. It has to be at least somewhat pure peanutbutter too, not the syrupy sweet goo that passes for peanutbutter from the name brands. Aww great, now I'm hungry! Think I'm gonna have some toast.

Empanadas. Easy to make, cheap, taste great and you can fill them with pretty much whatever.
Here's a pic of the last batch I made. I filled them with quince cheese that one time but you get the idea, they all look the same from the outside anyway. These I coated with sugar, hence the glisten.

Poorly-made Ramen... (Those poor leftover meat chunks...)

OT: Egg Sandwiches... If for some reason I wanted to add "options" to this, I would either put some salt and/or pepper on the eggs, choose either the Wheat Bread and/or English Muffin, drop the salad and/or bacon into the cooked egg itself, or cook everything AHEAD of time in case I have nothing planned for dinner, anyway...

Other than that... Bacon... Because bacon...

I got really organized and started preparing meals you can freeze then chuck in the slow cooker on a morning and when you walk in at night BOO! dinner is ready.

If not pasta, 10/15 minutes and scoff! God bless pasta for being cheap and easy (kinda like an old friend!)

Oh my GOD, that looks tasty! They kinda look like pirozhki, don't they? I've made those a few times, and I usually fill them with mince meat. Do you deep-fry them, or are they made in the oven?

Me too actually. I don't eat it that often, but I often cycle through it a few times a month. Relatively tasty and easy as hell to cook. I usually make a sauce from a mix of tomato paste and tomatoes, season with garlic and let it simmer with the meat until the spaghetti is finished.

For those times I've forgotten to thaw meat or simply don't have any available I just throw a frozen pizza in the oven though.

Dice bacon and onions fried, Mix with macaroni and real cheddar cheese. Tasty, easy and most likely very unhealthy.
That or stir fry.

Pasta with an arrabiata-style sauce that I make using a can of diced tomatoes, olive oil, and one of those little packets of crushed red pepper you get from pizza places.

Pasta w/ Browned butter and Parmesan. (Hoity Toity Mac & Cheese)

Add 1 to 2 Tbs of butter to a skillet and place over Medium heat, stir frequently until the butter starts to turn a light brownish colour.

Mix browned butter with cooked pasta and top with grated Parmesan (Mizithra works well too but it can be harder to come by.)

Optional #1: Add a clove of garlic to the butter while it's browning if you like.

These look amazing. Do you have a recipe? I need to expand my repertoire and these are very much up my alley

OT: Cooking up a couple bratwurst and dumping them on a bowl of rice. Especially if you can find some good jalapeno cheddar brats

A baked potato. Spice it however you like, add a little something (either a random sauce, bit of butter/margarine/olive oil) and you've got a nice (if not complete) meal. I generally acompany it with some raw veggies I have lying around. Whatever leftover meat I have. But the core is really the baked potato.
