Dual wield, one regular length saber and one that's about half the length. A swashbuckling style.

Wow, this thread is nerdy even for a video game forum. But since I'm here...

"Niman allows a Jedi to fight with harmony and justice without having to resort to powerful, aggressive movements or overt emotion." That sounds like what I want.

I fancy myself as a bit of a Makashi user, although I'd probably go for Ataru in the end because it looks a hell of a lot cooler.

Alternatively, for the ultimate in cool, I'd go for a Shien-grip form of Jar'Kai, much like Starkiller uses in this video [http://www.gametrailers.com/video/e3-2010-the-force/101182].

You can turn a lightsaber off. You can turn a lightsaber on.

There's a word for using this to mess with your opponent something royal. I would master this, and use deception and trickery to unbalance and unsettle the opponent.

And then beat them to death with my bare hands.

I believe you may be referring to the idea of Trakata [http://starwars.wikia.com/wiki/Tr%C3%A0kata]. Very sensible, but it would require a great deal of skill to pull off.

Since I know Muay-Thai I would make lightsabers to go over my fists, elbows, knees, and legs and use that.

For my combat style, see Starkiller in the Force Unleashed DLCs (discontinuity FTW), except for the reverse saber holding.

He's just brutal. Saber lock? Headbutt the sonuvabitch. Another saber lock? Grab him by the head, throw him in the way of a snowspeeder. Enemy on the ground? Grab him by the leg then throw him against some metal surface.
Generally, I don't really know the seven styles, but I would go with the most agressive one, and combine it with as much Combat Pragmatism as possible. And a lot of brutality.
