Lus-ma, because General Grievous is AWESOME. Easily my favorite character in all the films, even though he's only in one.

Dun Moch looks cool too. I always thought psychological warfare was pretty neat.

Shien/Djem so with a little bit of Shii-cho and Makashi thrown in for good measure.

Either that or...

Juyo with a little bit of Ataru and Shien/Djem so added into it's form.

You know from Jedi Knight 2: Jedi Outcast? Blue (fast) Yellow (mid) and Red (heavy)
Or just a gun. (A more civilized weapon for a more civilized age huh? Well, guess what? Times have changed)

Wow, this thread is nerdy even for a video game forum. But since I'm here...

I fancy myself as a bit of a Makashi user, although I'd probably go for Ataru in the end because it looks a hell of a lot cooler.

Alternatively, for the ultimate in cool, I'd go for a Shien-grip form of Jar'Kai, much like Starkiller uses in this video [http://www.gametrailers.com/video/e3-2010-the-force/101182].

I believe you may be referring to the idea of Trakata [http://starwars.wikia.com/wiki/Tr%C3%A0kata]. Very sensible, but it would require a great deal of skill to pull off.

Since I know Muay-Thai I would make lightsabers to go over my fists, elbows, knees, and legs and use that.

For my combat style, see Starkiller in the Force Unleashed DLCs (discontinuity FTW), except for the reverse saber holding.

He's just brutal. Saber lock? Headbutt the sonuvabitch. Another saber lock? Grab him by the head, throw him in the way of a snowspeeder. Enemy on the ground? Grab him by the leg then throw him against some metal surface.
Generally, I don't really know the seven styles, but I would go with the most agressive one, and combine it with as much Combat Pragmatism as possible. And a lot of brutality.
