My laptop won't run anything past the post-release 1.6 so I don't really care that much. It might go down the drain eventually but I think Microsoft are smart enough to not screw up a game with a fanbase this huge.
I agree with your opinion on Fallout 3. I played New Vegas first and couldn't even bear to play to the end of Fallout 3 because of the bad writing and lack of interesting quests (or sidequests in general, actually).
Surprisingly few, actually. I've been playing a lot of Dota 2 the last year and obviously it doesn't have an ending.
Dark Souls II
The Witcher 2
Gunpoint
Papers, Please
Terraria (well, I at least got to Hard Mode with my friends)
Borderlands 2
I loved that game. I think the servers were still up until about a year ago, but there were never enough players for a Domination match. I actually preferred the 'small' 64-player maps, especially the VALOR Sabotage map where the final point is inside a huge wooden building on a hill.
The real problem is the huge nerf to the number of casts for offensive miracles. My faith-strength build is now completely gimped with Lightning Spear uses down from 11 to 3 (and Emit Force from 8 to 4), and the Defender Greatsword got nerfed as well for some reason.
If you want to get to New Vegas easily, here's what you need to do:
-Kill the Powder Gangers in Goodsprings and get the Stealth Boy from Joe Cobb.
-Go east past the NCR Correctional Facility and through Hidden Valley. You won't be able to get into the bunker there, but it's a good idea to...
The Torgue weapons from Borderlands 2. They fire explosive bullets, and they're ridiculously satisfying to use - especially the somewhat rare, incredibly powerful shotguns.
You could always try Captain's Mode - that seems to have better players in general, although there are a fair few that rage-quit when their favourite hero gets banned.
