It's awesome. Do the side quests if you want to. Explore if you want to. Do crafting, enchantment, mine ore, chop wood. All optional.
If you just want to breeze through the main quest that's fine too.

Is the game keeping track of objects in Whiterun when you're in Riften? If so that could be fixed by splitting the world into zones and only loading the objects for the zone you're in.

I wish there was a more nuanced way of dealing with humanoid enemies than them just automatically attacking you. Limited conversation options would be nice, especially if you are a fellow criminal or hot chick.

Agreed on 1, 2, and 3. Regarding lockpicks by the time I reached a secret expert-level chest at about level 12 I had about 80 lockpicks from just looting bandit bodies and such. And I got a nice skill boost with each failed attempt. I've never bought any lockpicks.
Remember also if they have anything that you want, like soul games, weapons, armour, spell books, etc, that you can buy stuff from them first to increase how much cash they have.
When you have a horse having a companion is awkward. They can't ride with you, and I don't think they can have a horse. So they get gradually left behind. They also get left behind when you drop down off rock and ledges and such.
