Phantom of the Opera. I'm amazed that it hasn't been done yet. It's a beloved classic, and yet the most prominent film adaptation to date is almost universally considered to be pretty bad.

The films do leave out some pretty great stuff from the books, and some of the changes (particularly to Saruman) lack the nuance of the original material and are even nonsensical at times, but the movies are really well done overall and SO much more...
It seems like everyone forgets his role in Ratatouille. He voiced Anton Ego, the food critic? It was a bloody fantastic performance. He OWNED that movie, despite not having a ton of screen time.
