It's terrible. Gaping plot holes and shameless fan service crammed right into the middle of what's supposed to be serious plot construction, a plot line that utterly deviates from the source material because the director felt "just cuz." 2: FMA: Brotherhood is perfectly watchable, and I certainly prefer it over the original because it doesn't leave gaping plot holes and most of the plot lines built out of convenience are done away with. Then again I also skipped straight to the new content.
3: Everything else? Generally I'd recommend Japanese dubs w/ English subs whenever you can help it. Often times they're just better. It's not always the case, but not everything gets to be Cowboy Beebop. Often times though there's just things in Japanese conversation that just do not translate well into English.

Of course on the other hand these shows might just fly over your head. Ergo Proxy I had to read explanations to pick up on everything, and I literally fell asleep watching the second Ghost in the Shell movie. After forcing myself to stay awake when I watched it again I just got a migrane from it.
