The Gurren Lagann opening is great to listen.
Also, Trigun, even trough i don't think that it's that awesome ,i just have to mention it, cause it is ...cool.
Dragonball Kai is one that i never skip.
But i cannot name the Best Anime Opening Song, never had the feeling that "this is the one".

Oh it's gotta be Cowboy Bebop; it's just so good! Perhaps because it breaks from tradition of the usual cheesy J-pop stuff, but how can you not like it? Reminds me of The Venture Bros and the Lupin series.
