I recently bought Bioshock (something I've been meaning to do for a long time) and one thing really amazed me; the difficulty settings. I first played on medium thinking easy would be too easy and hard being near impossible and soon in found myself dying every few enemies. I switched to easy to see how it went and i found enemies to be no challenge at all, especially the Big Daddies. I switched to Medium and again it was near impossible. Is it just me being bad at the game or do others find this as well?
I'm not finding it too hard actually. I'm playing on hard and, apart from the Big Daddy i'm currently facing, I haven't had much trouble.

I haven't used a vitachamber yet but they're not disabled, would I still get the award if i switch them off now? I'm considering using it to kill this big daddy though.

If you've played System Shock 2, you wouldn't have found Bioshock hard.
When even the monkey enemies terrify the shit out of people, you know you're getting into something deep. And don't mention the cyborg midwives or the maintenance robots, or I might have to get into a corner with a grenade launcher to keep me company.

But even that's easy compared to the likes of Operation Flashpoint and ArmA: Armed Assault. Bullet ventilation ensues.
Exactly friend - you understand. You know there's something around the corner - you know it, and you've got an assault rifle racked to full auto ready to riddle it with holes. You round the corner and it's closer than you thought "SHIT!"
