I'd say no. We're accustomed to thinking of light sabers as being able to cut through things, sure, but in the movies the we see limitations to their cutting ability--the foremost being Luke only wounding Vader with a shoulder strike rather than cutting Vader in half. I think that the light sabers were imagined to be what they are--laser swords--rather than a MacGuffin tool. There are things lasers can't--like mirrors.
From that perspective because the limits of a light saber pretty much render them to 'laser cutters' the light sabers shouldn't be able to cut through adamantium because the mythical metal is defined as indestructible, i.e. lasers don't work on it.
