Most the time I'm not looking for challenge when I play co-op, just fun. I usually only play co-op once I've finished the solo campaign. It's just an excuse to hang out with a friend and laugh at each other. A degree of challenge gets added when you're laughing at each other so much and goofing off that you're making mistakes.
Yeah, I went from dufus to king of the hill while you were taking a break for something (The first part of The Ark in Halo 3 when the Hunters arrived for everyone else). What made it worse was we had to finish for the night and do it all over again the next day.
I think what best summed it up was what I said on the last night upon finishing Halo, the final Warthog Run as the ring explodes round us: "Oh crap, this is on Legendary isn't it?". We'd had so much fun beating into the levels it hadn't occurred to us (well me at least).
I would also say that sometimes it depends on the game as well. Halo 3 has a lot of checkpoints and unless you're playing with the gold skull that forces restarting the level you're pretty safe for respawning. All co-op means is that you get an extra chance to avoid going through the whole process.
Thinking about it a bit more though and why shouldn't co-op be easier? You might be facing the same opponents but there's two minds facing them. The human element plays a big factor.
