So my sister and I are planning a special meal for my parent's anniversary this year. I bought a bunch of salmon for the entrée[footnote]Yes, the main course itself. Language and how other places use words is fun![/footnote] and we're planning on having salad, steamed veggies and garlic mashed potatoes as the sides.

The problem is... I don't know exactly what to do with the salmon for the main course. So I'm going through google but I figured there might be some people on the Escapist with good ideas, hence the thread.

So do you guys have any idea what to do with a lot of salmon to feed 4 adults and 2 kids? I'm going to be cooking this tomorrow... o.o

And, as a question for everyone, what is your ideal meal to serve to visiting friends and family?

Hmmm... This reminds me, I haven't had lunch.

I'll be back in a half hour. ;)

That'd be great if it didn't come in a can. I'm skeptical of canned food that normally aren't canned. Seriously, who puts fucking sausages in a can?

Grill it and add garlic butter and lemon pepper.

Make sure the lemon pepper isn't something that has sat on a shelf for 5+ years as well. That tends to affect it.

Don't eat salmon. Can't stand it but the standby way is baked in tinfoil with lemon and basil for about 10 min per ounce of fish. skin side down. Not a lot mind, maybe a teaspoon total.

You and I are on opposite sides of this. The only reason I don't eat it every week is because its expensive here. I will consider your advice though.

What about the second question in the OP?

OT: Grill it? Bake it with some herbs and oil and stuff? I've never made salmon :p

Second question...

As a rule, I never let family members into my home to eat. Helps keep me from having to throw anyone out.

I don't mind taking food to them to eat at their houses though. I usually do chicken noodle soup(homemade, even the broth) if it's cold out. Don't really have anything particular if it's hot, I generally just throw a a little bit of everything in the kitchen in a pot and make it work somehow(which was how I figured out how to make chicken noodle soup). Sometimes it doesn't work. Sometimes it goes right in the trash. It's usually at least decent, sometimes awesome though.

After a few videos, I have come to pick the one that will work the best! Now I need to pick up some broccoli and potatoes for the side dishes as well as think of a sauce that will work with the recipe. Thanks for the link, quite helpful.

As to that depends on the section of the family. Anything from vegetarian dishes to Tex mex.

Well, I really like <url=http://uktv.co.uk/food/recipe/aid/515687>Tequila and Chilli salmon, but it requires 18 hours of marinading, and tequila, which I understand isn't a staple for most households.
I also enjoy a bit of Salmon covered in <url=http://www.bbcgoodfood.com/recipes/3217/spiced-salmon-with-coriander-mash>Tikka Paste, where the paste is smeared onto the salmon fillet, and served like that.

Not sure how do-able either of these are in your limited time, but hope they can be of some help. My advice, serve with some potatoes. Salmon goes great with most forms of potato. :D

Salmon is usually best BBQ'd just add some seasoning you guys like and there ya go problem solved. I would recommenced doing it well done tends to taste best that way.

I serve mac and cheese...homemade of course.

as far as salmon goes, i don't eat it because no matter who prepares it or how it is prepared it upsets my stomach and I"m in the bathroom for the next 2 hours minimum. However going by scent alone, my favourite so far has been grilled salmon with garlic. I don't know everything in it i just know it was grilled and garlic was involved. I also know that you CAN eat salmon raw too(or at least I think that's correct I'm not too great with fish).

Baked in the oven, with or without tinfoil.
Can't remember the spices, since I only use a particular spice mix for it, but use lemon and creme fraiche on the side, after it's baked.

Can't really help you with salmon, not too keen on it myself.

I tend to stick to what I know when cooking for other people. Usually it's either Chilli con carne or a Spaghetti Bolognese. Chilli powder, red & green peppers, mushrooms, kidney beans and a diced onion or a tomato & onion sauce, additional diced onion, chopped tomatoes, garlic and mushrooms. Easiest food in the world to make.

Bit of basil, some proper pepper and a chunk of butter, all wrapped in tinfoil, then barbeque that mother fucker til it looks done. Serve up with some fucking delicious yet affordable white wine for some fucking good times.
