I've found i can spot differences in animation pretty easily. For example in Black Lagoon (which i highly recommend) the animation is highly detailed but does not progress smoothly. However in Soul Eater, the animation is"goofier" (for lack of a better word) but it moves forward smoothly. The fact that styles look similar (speculation) is that enthusiasts like the way anime characters are designed.
Try to think of it this way. If you watch a live action TV show, generally, the people all look the same. But they do have different facial features, hairstyles, and personas. Main characters are always decent/cool looking and likable characters because that is whats in demand.
