Leah wasn't denying the existence of demons, or evil and such. What she was disbelieving was the 'end of days' prophecy that Cain was trying to explain. The fact that the evil will rise again and threaten all existence is a rather difficult thing to believe, especially when the 3 prime evils have been destroyed along with their soul stones. (which she could think is a wild tale from an old man's imagination.)
Remember, not everyone believes/know diablo and the other evils exist. The average person probably only believe they're just monsters of this world and not proper demons. Not everyone seeks tomes of our worlds existence like Cain did.
She's been traveling with Deckard all over the place and even said herself that she had to fight some monsters. But that's simply a common occurrence in Sanctuary. You even pick up notes and books from other researchers of the various monsters in the game, which proves monsters have ALWAYS been around. So Leah didn't regard that as unusual.
The stories of Tyreal helping Deckard and the heroes out in pandemonium, killing the prime evils, soul stones , the demon lords returning to threaten to world once more coming from a 90 year old man who does nothing but research ancient scriptures doesn't exactly seem...sane?
She hasn't seen ANY evidence of the end of days until a meteor crashed into the cathedral. This points out that things like that must happen if they actually call falling stones from space meteors.
It wasn't until the vision of Tyreal racing through her mind where she realized how real and accurate Cain's stories really were.
This is how I interpreted the story, and this is why I can see Leah as a very nice story component.
This. Also keep in mind it's not like everyone in the world dealt directly with the prime evils. They would have seen an upswing in horrible looking monsters, and presumably gotten the hell out of dodge. There's a reason that there are maybe 20 people in every town in Diablo 2 and 3, everyone else ran the hell away when monsters ate the real estate, or got eaten (along with the real estate).
As for not believing in angels, in Sanctuary I can buy that. Leah has been told the prime evils have attacked the world twice in force while the high heavens... well, I'm assuming they were on angel dust or something (the real reason for them being the "high" heavens

) So old uncle Deckard yammers on about angels and fate and the end of the world... crazy old man.
If anything, the Tristram arc is the only bit of the plot that made a lot of sense. My problem with the story is that EVERYONE is busy holding on to the idiot ball for the whole plot.
Adria's motives: Pretty frackin obvious. She comes out of nowhere, has all the knowledge about an ominous artifact and she makes Leah do all the work containing it.
The stranger's identity: Really, really obvious. Cain should have called it from minute 1.
Belial's Identity: SO MUCH OBVIOUSNESS! HE MIGHT AS WELL HAVE BEEN WEARING A SIGN! Lord of lies my ass...
And finally, to those saying Leah is the worst character ever, I have two words: HEY! LISTEN!
