Always in the fridge. They're even meant to be kept in a fridge. It's good to slightly cool down really hot meals and it does not change the game at all, unless you put more ketchup than there's food you're applying it to.
I'm a little fixated to keep things-that-should-be-kept-in-a-fridge in the fridge. If I use milk/cheese/butter or anything the like, they must be instantly put back to the fridge after use. I can't stand it when some people leave a carton of milk or a cheese to the table for couple hours or so, in fact I can't even stand if a carton of milk has been left on a table for five minutes. Milk, for example, starts to taste different, if it's gotten warm at any point. No matter if it's been cooled afterwards. And it goes bad way faster too. Some sort of cheeses gets all soft and you can't slice them as nicely.
Everything that's supposed to be in the fridge, should be there. Except for the time it is being used or transported. This is a dead serious matter not to be taken lightly! Kind of like AIDS or the fact that Russell Crowe shouldn't act.
