I just made a grilled cheese. All I needed was bread, cheese, and a heat source. Took about 3 minutes.
It doesn't get much simpler than that.

George Foreman. Those things will cook just about anything. A favourite of mine being grilled chicken with grilled vegetables. Chicken needs like 20 mins and the veg (if its fresh) only 5-7ish. You can also add a bit of oil and a few herbs just to liven up the taste a bit.

Mac and cheese is my secret weakness. I may church it up by slicing some hot dogs up in it but thats getting fancy,so I save that for date night.

Chicken with garlic and basil pasta.

Cook chicken and pasta. When the pasta is cooked, get some garlic and basil paste and throw it together and BAM! Add chicken :D

Curry. Especially Butter chicken. Easiest thing in the world as long as you have the sauce in one of those sachets. :)

I generally go for the simple wok dishes when I'm not in the mood to cook.

Cut up some chicken breast (or buy it in small chunks), add pepper, salt and curry (not the sauce, the spice).
Throw it in the wok for a few minutes, add a bag of wok vegetables. When the chicken looks like it's edible, cook some instant noodles, toss them in the wok, add soy sauce, and done.

10-minutes, you barely need to do anything except tossing it all into the wok and adding spices and there's endless variations.

A cheese sandwhich.

2 slices of bread and some cheese between them. Add butter if you want.

I'd go with pasta, eggs, sandwiches, and barbecue. Doesn't get any simpler than that....
