Thunderpick - ManOWar, it's just one huge bass solo
Sons of Odin - ManOWar
Panic in Detroit - David Bowie
The Chain - Fleetwood Mac, it's from the F1 adverts
Gay Bar - Electric Six
Through The Fire And Flames - DragonForce
Bohemian Rhapsody - Queen

Did not read all of the previous ones, so excuse me if some had been mentioned:

Queen - Innuendo
Muse - Take a Bow & Blackout & Sing for Absolution
Edguy - New Messiah
Wolfmother - Tales & Vagabond & Joker and the Thief (imo best Song available on Rock Band)
Avantasia - Glory of Rome & The Scarecrow
Ayreon - Pretty much anything of any album
Rammstein - Ohne Dich
Subway to Sally - Umbra & Der Vagabund & Feuerkind (especially that one)
Rhapsody (of Fire) - Magic of the Wizard's Dream (especially the one with Christopher Lee)
Dream Theater - The entirety of "In the presence of enemies", along with many other songs.

I guess i could come up with a lot more...

Edge of Sanity's Crimson and Crimson II. Each 40 minutes long with enough variation to never be boring.

Green Carnation's Light of Day, Day of Darkness. One hour long song that's an intense emotional journey.

Epic albums I'm into right now are Mastodon's Crack The Skye and Weakling's Dead as Dreams among others.

How can none of you have mentioned Kashmir by Led Zeppelin? That's the original epic song!

EDIT: Maybe you did, but I'm to lazy to look through the posts.
