Unreal Tournament 99 was the most adrenaline fueled game I ever played. Then vehicles ruined the UT series, damned shame.
Also, Prototype, insane speeds + insane action = yeeeeehawww!

Since most of the FPS' have been pointed out, I'd say I get the most rush out of AudioSurf. Dragonforce's Through Fire and Flames is the ever-popular choice, but basically any fast hard song you love, mode ninja mono.
Also Trackmania Nations Forever 'No Brakes' tracks.
