Tarkovsky is very good, but requires a lot of patience. Most of his films push 3 hours, and rely more on cinematography than actual on screen events. If you don't mind that, then the best film to start with is probably Solyaris, his psychological sci-fi film. Most of his other films are great too, but the best ones are probably Stalker, Andrei Rublev, Ivan's Childhood and The Mirror. My favourite is probably Stalker, which was based on the book Roadside Picnic, and was later the inspiration for the game STALKER.
