My choice is between several options(All relating to grass)...

Sunny Day + Solar Beam - It turns my grass types into a pleasant case 'FRICKEN LAZER BEAMS' for my enemies. =3 It does take extra time for the set-up sure... But god is it fun to use. <3

Petal Dance - In the use of a good Liligant with Own Tempo this is all the power with none of the draw back really.

Seed Flare - Low PP but it's made up for me by the chance of lowering Sp Attack. It leaves it open for all kinds of other nastiness afterwards.

Thunder from the original games. The sound and the animation just blew my mind as a kid.

In all other cases Thunderbolt. It's my 'lucky' technique.

Substitute is the best move guys.

No other move can even compete with the level of utility that substitute brings to the table. Not U-Turn. Not Toxic. Not Earthquake. Not Protect.

It's just the very best.

Can't say I really have a favorite. I will say though that I find Surf to be a very useful move. Inside and out of battle.

Psychic. I was kind of surprised by the number of Pokemon I had who could use it (no I can't remember who exactly) and even though I don't remember it having the same confusion after-effect as...uh...confusion, it's still extremely powerful. I used to like Psybeam just as much in gen-1 when it looked like my Kadabra was firing a freakin' laser-beam from his freakin' head.

Far as I remember, they're not really visually nor mechanically distinct, so I can't choose one.

I personally like mud shot for my Swampert. At a certain point of Emerald, I was one-shotting all the pokemon that weren't flying type. I should say almost all the pokemon, Tate and Liza fixed that. Damn solar beam. :(
