Tuna or salmon with Vietnamese chili sauce. Good stuff there. Although I haven't been able to find any good smoked salmon lately, so I've had to eat almost exclusively tuna. Feels bad, man.
One way I like to prepare it is to first make some toast, apply garlic butter lightly, place on a small slice of cheese, lettuce on that, fish on top of that, and apply sauce on top of that.

Also sashimi, but I hesitate to prepare it at home. Still good though!

Shrimp fried up with a bunch of other stuff. Add a bunch of spices and fry it all in some broth... can't go wrong, man.

I am a fan of bowl-noodle stuff (most notably the nong-shin Kimchi and, hot&spicy bowl noodles). They're great on their own but I make mine a little differently. Not too drastic but I prefer to boil the water beforehand instead of microwaving the thing. I also add a raw egg to the bowl (the boiling water cooks the egg) and a splash of soy-sauce (I don't measure)
Something else I like making (which can be added to the above soup bowl) is tamagoyaki. It's basically a fried egg but with the addition of some sugar, soy sauce and whatnot >.> I'm still having trouble folding it though >.<
