As much as I'm ashamed to admit it, the most awesome display of a vehicle I've ever seen was a Ghost in Halo 3.
My buddy grabbed one that was so damaged it was on fire, yet he killed everything by ramming it. He took out 4 brand new Ghost's with his broken one.
Lulz were had.

Another vote for the Warthog from Halo (And the OTHER warthog, from Silent Thunder 2). The scorpion tank from the halo series is also quite nice.

1. Leviathan from UT3, look! I have a vehicle that shoots a nuclear laser (more or less)!
2. Nuke Cannon from CnC Generals. Does this need an explenation?
3. The boat from HL2 with the gun mounted on it. Laser-minigun! XD
4. The choppers from Battlefield 2. They can't take much damage, but they're really hard to hit.
5. Tha airplanes from BF2. Have you ever been upside down in the two-seat bomber, 1 m over the ground between two trees and survived the stunt?
6. The scorpion from UT3. It shoots bombs and it can make blades come out of the front.
7. Mechs from Mechwarrior. Lots of weapons, lots of electronics.

Yes, I know the Ferrari F50 GT is faster (0 to 60 mph in 2.9 seconds, as opposed to 3.2 seconds), but it is horrible to drive...

Perhaps thats why they made it destructible in 2 and 3.
My favourite has to be the Timberwolf/Mad Dog from the Mechwarrior series, one of the few mainstream mechs to not employ 'look like a robot man' design.
I think my favorite vehicle is any Sports Bike in Midnight Club 3: DUB Edition Remix.
Just get on the freeway and see how fast you can drive without crashing. It's a game unto itself. Also, ANY race becomes much more intense (even by Midnight Club standards) when you race in a bike. Every little scrape sends your ragdoll flying, but you have super acceleration and an amazing top speed (not to mention killer handling) to make up for it.
It also means that pretty much any race against cars is winnable, no matter how much you crash. Most cars at C level and below just can't go as fast as your bike. There's also the matter of being able to pop wheelies.

Uziel - Mech Warrior 4 (looked pretty bad-ass, and was fun to pilot)
Arwing - Star Fox series (except for Slippy's arwing, which should always be shot down at the earliest opportunity)
Cicada - Unreal Tournament 2 (Death from above!)
The Puma - Halo 1 (I think it looks like a big cat)
