Clover games, F-Zero GX (best. racing. ever.) Timesplitters 2 and FP, Pikmin 2, and whatever else catches your fancy. SSBM and Soul Caliber 2, if you aren't totally sick of them the way I am (just way too burned out on both games.)

Oh, and don't forget Baten Kaitos. Great game. Gotcha Force in another forgotten gem.

What games are you into mostly FPS, adventure, fighting, etc.

Gamecube has alot of amazing games and alot of them are diamonds in the rough! -
Eternal Darkness: Sanity's Requiem
Wave Race: Blue Storm
Pikmin 2
Soulcalibur 2
Beyond Good & Evil
Killer 7
Timesplitters 2
Viewtiful Joe
Baten Kaitos: Eternal Wings and the Lost Ocean
Battalion Wars
Super Monkey Ball 2

And then there were the games that you knew are going to be good. -
Metroid Prime & Echoes
Super Smash Brothers Melee
Mario Sunshine
Metal Gear Solid
Any Zelda Game
Resident Evil 4
F Zero GX
Prince of Persia: Sands of Time

There are plenty more but this would be a good start.

Melee will always be one of my favourites, if your really a fan of Nintendo you would put that as a top tier.

Absolutely go with Pikmin 1&2. LoZ Wind Waker. Luigi's Mansion is fun if you like easy fun. And Paper Mario: Thousand Year Door is good too. I can actually replay that one without being bored.

Both Metroid Primes, F-Zero GX, Zelda Wind Waker (all the sailing didn't make it that much worse for me), Smash Bros. Melee (if you don't have or intend to get Brawl) and Star Fox Assault. (Enduring the horrible voice acting and plot is worth it to shoot the crap out of thousands of enemies.)

All of which have already been said, so consider this me reinforcing the fact that these are fine choices. Pikmin 2 was alright, but not as highly reccomended as the aforementioned.

the only two games I had fun with were Pikmin and Pikmin 2.
of course, I was a strategy freak, so I was basically playing chess whilst exploring. Other than that those are the only two games I actually bought for it, after it being bricked upon the second week of purchase. My first impulse would be to buy Pikmin 2 because there was really no reason to play Pikmin.

It hasn't been mentioned nearly enough, but "Skies of Arcadia" needs to be on the list of must-haves for the gamecube. It's the best rpg made for the system, second one being "Tales of Symphonia", and well worth the investment to have.

"Paper Mario: Thousand Year Door" is also easy to find and fun to play, though they make it most rp'esk in gameplay, the writing for the game is satirical and witty.

You can get many of the "Spyro" games for next to nothing now, along with "Pikmin" (strategy) and the two "Harvest Moon" games (farming sim, buy at own discretion.)

The "Metal Gear Solid"s are worth owning, but it's already been brought up.

"Super Smash Bro's Melee" is a must have fighting game.

There is a "StarFox" game that looks deceivingly good, but I'd stay away from it. It's short and they rip out half of what a good StarFox game really is.

Edit - If I'm going to put quotations around one game, I may as well put quotations around them all.
