Fable, the first more than the second though I'm not sure why.
Morrowind, there's just too much to see an do in that game for it to ever get boring.
Oblivion, ditto.
Fallout 3, as above aswell as being incredibly immersive.
Portal, because it's Portal.

Just about any Contra game
This list is a very fine list.

Also, either grab a GBA or an emulator and play:

Megaman Battle Network.

Golden Sun.

Advance Wars.

If you ever get a chance to play 'Shadow of Memories' aka 'Shadow of Destiny' (If you've even heard of this, you win a thing) I really recommend you do. It's a kind of time travel/adventure/mystery game in which you travel to various periods of history in a small German town to prevent your own murder. It sounds unbearable but the story is really quirky and it has one of the most original baddies ever, not to mention all the different ways you can go about preventing your demise.

Fable1/2 - very good if you like European type fantasy, very enjoyable games, with in my opinion some of the nicest settings you will ever dream about building fortresses of doom in...I mean it's pretty...

Crackdown - Very fun, and the combat/levelling system is enjoyable enough that I can play and replay the game.

Fallout 3 - There's a reason the majority of Rpg/whatever fans like it, find out.

Mercenaries 2 - Lots of fun, I've finished it three times, can't really explain why, it's just that enjoyable.

KOTOR1/2 - If you haven't played it you better have never had a computer or xbox, or you should punch yourself in the face.

Thief 3 - Fun thieving system, with enjoyable stealth gameplay.

I've seriously played them all for something like a combined 400 hours, though I still haven't finished Thief 3 (if you have played it, then you understand, I can't go through the cradle again...I know, sad and un-manly but they scare the shit out of me).

Guild Wars
Advanced Wars: Duel Strike (haven't played the others yet)
Battalion Wars (just gotta love it ^^)
Mount and Blade
Half Life Series
Team Fortress 2

Oh, and I think the Penumbra games deserve a special mention. Probably the best (if not only) actual horror games out there. Great puzzles, unnerving atmosphere, chilling sounds...just...beautiful, every bit of it. And seriously? Only $20 on Steam for them all? Why not I say!

Hmm...now that I think of it, maybe I should link the Tech Demo for Penumbra: Black Plague?

Eh, I'll wait and see if anyone cares first, heh.
