Other times in some novels they have genitals, Orks have bathrooms and need to piss, and enslave human and Eldar women to be literal strippers and they hoot and holler and throw teef (money) at them and seem very much aware of female attractiveness and sexuality.
Its mostly narrative inconsistencies, but personally I just assume different planets have different radiation and that affects the spores. Orks have an innate ability to adapt and evolve to fit the environment, and maybe sex organs and sexuality is an adaptation to a specific enemy/warzone/world.

This may have been moved over time towards the fungus and violence approach as they've wanted to differentiate them from the old tropes somewhat. I also suspect that Warhammer will be increasingly aware of changes to social attitudes: orks enslaving women to work as strippers might have gone without much notice 20+ years ago, but looks a lot more awkward nowadays.
Funnily enough its from the relatively recent War of the Beast series(roughly 10 years ago). Its the Empire Strikes Back, but for Orks. Basically the Orks have spent the last 1000 years since the great crusade ended getting ready for a counter crusade. All the Orks of the galaxy unite under a council of PrimOrks, a play off of Primarchs. And what happens is as the Orks all come together and form a Type 3 civilization. They harness entire planets and stars, build great gravity engines that teleport entire star systems instantly and accurately, and they start to develop culture. They build churches, they build schools and towns and cities, and have plumbing and trades, and even send Ambassadors to Earth to negotiate.
