Funnily enough, i tend to revert to my country's language(Malay) for most of my catchphrases. Thing is... My Malay is quite frankly... Shit and English is hell of a lot better(I've been praised by many a native English speakers for my vocabulary).
"Bodoh"(Buu-doh)- Pretty much the malay version of stupid. I use this alot
"Eh, paloi"- means idiot but I use it as "well that was dumb"
"Bising..."-Noisy. Use this a lot in my dorms
And a bunch more. Tends to confuse most of my friends

"Well... cock"
"...Oww..."- I say this so much this may as well be a catchphrase
"Oh son of a-"
"AAAAAAAAAAAaaaaaaaaaaaaaaaAAAAAAAAAAAAAAAHHHh"-I'm in Uni. I use this a lot
"Just shut up and play"- My(and by extension my band's) Motto for a gig. Cut out all the fancy talk and play. Also the name of one of the songs Ive written
"Confound [X], they/it drives me to [Y]"- Used this a lot recently after watching the Dover Boys of PU again
"NO ONE WILL EVER KNOOOW"-Ditto, Tend to use this when scheming with my others
"We're fucked/Boned/DOOOOOOOOOOOOMED"
And of course
"D'OH"

I don't really have a single phrase.
For the most part, when I'm surprised and something slips out, it's a combination of vulgarity and whatever else my brain spits out.
I think the latest was "sweet shitting dicknipples!"
Did you write the dialogue for bulletstorm?

I'm boring. I just tend to go "Holy Shit!" Which is the most boring and generic phrase of these that I could say. I may be imaginative and creative when it matters, but in my day-to-day life, not so much...

Usually I will shout profanities, sometimes even combining them. Recently I've started using "Bullocks" because even though I'm not English, this sounds pretty cool to me.

Alternatively, when someone asks me how I'm doing, if I am in a good mood i always respond with "borderline wonderful." People never seem ready for it.

"Jesus Buggering Christ Alight!" in that order, especially whenever I turn around when playing Fallout 3 and see a Deathclaw staring right at me.

"Shit, son!" - usually when something bad happens

"Christ on a cracker" - to complain when I'm in an unfavorable situation

"Sweet!" or "Nice!" - when something good happens

For bad stuff: fudgemuffins, hell, damnation, or buggeryshite, depending on social context.
For good stuff: hooray! yay! awesome!
For surprising stuff: Whaaaaaaa? Holy shit! Sacre bleu! Par Toutatis!

Aside from the occasional 'What is this, I don't even' I tend to go with the standards, a 4-letter profanity starting with 's' and referring to poop, or just 'Bollocks.' I tend to find being brief keeps things moving and leaves more time for a considered response.

"Carps"
"Curses"
"SHIZUKU NI!" (so many people need to just shut up sometimes)
"CARBON!!"
"[insert random term here such as "metacarpal", "Argon", "Archeopteryx" etc]"
...other things, but I can't think of them.

For mild surprise or for the start of a rant, I usually use, "Sweet Christ on a Cross Bun". When something weird is happening, I just opt for "Kinky".

"Son of a whore!" - Adopted from Frisky Dingo (same with Boosh and/or Kakow). I found that I used this phrase the most during the end of Dragon Age II ._.
I use this a lot, though I don't know where I got it from.
Son of a mother is another one I use. In the right tone, it still sounds like an insult, rather than just a statement.

I like using "What the shit?" as well instead of the usual WTF.
This. Also "shitting hell" instead of the more common "fucking hell"

Cleaner versions include:
"C'mon, really?!"
"Graaargh!"
and "well, frak"
