For ages I couldn't get past the big croc thing in gears of war 2 and then one day after not having played the game for a month I aced it first time, so he was my hardest until that day. easiest is probably that big thing at the end of quake, haven't played it in years but I remember being really disappointed.
In terms of easy bosses, that would have to be versing guilty spark at the end of halo 3, also that ADD guy from Bully. In terms of hard bosses, that creepy ass clown bloke from Dead rising. He was hard as hell, there are zombies everywhere and I had a good case of the jibblies after that disturbing intro-cutscene. A little off topic but in terms of clever boss-fights I'd have to say Glad0s from Portal (I loved that game), just about every boss-stage in Bully (Especially the nerds and the greaser boss stages), and that Locust leader from Gears of War 1 (As you can see I'm both a microsoft lover *Not a fighter* and a near amnesiatic)
One of the easiest boss battles I've ever fought was the turtle boss at the end of the first level in Contra III.
Maybe it's because I'm not teh shit at this game, but Abyzz from Marvel vs. Capcom II beat my ass for HOURS before I finally managed to bring all three forms down.

The hardest boss fights I can think of are probably the ones in GHIII, Lou is just ridiculous, I haven't done it but my friend only managed it because he got hold of a cut-string powerup.
Easiest for me was killing Dimitri in GTA IV, whilst in itself the boss isn't actually that easy I'd gotten so good at the game whilst playing through. I just pissed all over it.

Easiest is probably Majora's Mask. Especially with Fierce Deity.
Hardest: Fffffffff that's a tough one. Hardest boss I ever fought was Gyork (also from Majora's Mask) but for final boss I have no idea.

Easiest: Assassin's Creed. He had weird abilities, but seriously, he was a joke. Kind of anti-climactic in a way.
Hardest: there aren't many single player games where I found the final boss to be too difficult, but the final boss of WoW: The Burning Crusade didn't fuck around. Kil'jaeden was HARD.

The hardest boss I ever came across was the eagle in the Atari ST gladitiorial combat game Sparticus ( I think that was its name) that was imposible to beat as it had a one hit kill and always hit, it was put into the game as the maker hads run out of money and couldent finish the game, so it was made undefeatable, the best possible result was a draw where both you and the bird died.
The hardest boss I ever faced was Jet Black on Viewtiful Joe 2, V-rated difficulty (Hard mode). I'd say Ultra V-Rated, but I can't even beat the android.
The easiest boss I can remember is Queen Slug-for-a-Butt in Earthworm Jim. Just kept firing in her direction. The platform was constantly moving, but it was still easy.
