Just play a horror game with every light around you off and headphones in your ears. That'll get you immersed pretty easily.

But I really got into games like The Punisher, Max Payne, Halo: CE, Half-Life 2 and Splinter Cell: Chaos Theory.
I've found that games with an amazing audio component tend to be more immersive.
But for the PS2, Genji: Dawn of the Samurai, Onimusha 2, God Hand, BoF: Dragon Quarter and Valkyrie Profile 2.

Perhaps the problem is that you buy too many games? If you buy a game and get bored with it after two hours, then you definitely didn't buy the right game for you. Read some more reviews, join discussions, go along with the hype flow and try to refrain from impulse purchases and you should be fine.
Immersion is a personal thing really. You need to find something that really appeals as an interesting concept or something you think will provide a mental sink. Other people may be able to make suggestions (and some games are recognisably more immersive than others) but it comes down to personal preference. If you have close gamer friends you're better off asking them because they will likely know your tastes better, and have background knowledge to make accurate suggestions.

Half-life is immersible because it's an awesome game and a game world that you can be drawn into. Something like Red Faction for example might be a good game back doesn't have that little extra pull that makes you get involved and feel like you're actually in the game yourself. Some games have a good story and some are pretty, but the ones that have a little of everything are the ones that people like to play.
Also playing the game on easy first will let you get into the game without being pressed to beat it with any challenge. And then once you beat the game and enjoyed it, then you go back and play it on the harder difficulty, like Call of Duty: Modern Warefare

Saints Row 2 will get you immersed more quickly.
I recommend Dead Space; I didn't think it was mindblowing (I didn't really think RE4 was either) but if you liked RE4, you'll like DS.
