Difficult letters - F was between Fire Emblem and Fallout, which are two of my top franchises of all time, and I've played every Final Fantasy except 8, as well. And P had a battle between Persona, Pokemon, Paper Mario, and Pikmin, ouch.

So I managed to find something for every letter of the alphabet, with a bit of using the caveats.

The letters C, F, M, P, R and S, were unpleasant choices. I had to skip a lot there that I really didn't want to skip. Especially at the M.

I didn't actually play or finish the ones with letters I, Q, L, U, V but they all seem like things I could get into and I couldn't think of much better games that I have played.

I played You Don't Know Jack once in college and it appears to be the only game I have ever played that starts with a 'Y'. I think I need to pick up a Yakuza or Ys game to remedy that. Not that there's anything wrong with You Don't Know Jack, but I feel I should have some more variety for that letter.

Could probably use more variety for 'H', 'J', 'Q' and 'V' as well.
