Just strafe him while using your bow. When the big rocks appear, use them as cover and snipe him between attacks.

Hard: Jack of Blades Dragon Form - Fable TLC
STAY FUCKING STILL DAMN IT!

Easiest: Volf in NG2. Just run around him, wait for him to charge, dodge out of the way, and hack him. That's it. Done. Next.

Hardest: Alpha-152 from DoA4 beat my ass >.<

I don't see how Virgil was that bad, Nevan was harder than him IMO.

Easy-Gonna go with Jack of Blades as well in Fable, Alls I did was used the spell where you get huge and he can't do anything to you.

Hard-...Too many to name BUT! I will say that all of Ghosts 'n Goblins comes to mind. And Vergil, AND God Hand on Kill! mode.

I got him with a Katana, I think. Or a battle axe, one of the two.

Hard(I'd say impossible: MacGruder in Gun

MacGruder isn't all that hard to beat if you know what you're doing

The Dark Mime God from Rain-Slicked Precipice of Darkness is a bastard (although that maybe due to the fact im using a mouse pad, not a mouse, which makes the controls awkward, plus there seems to be a bit of image lag, which makes getting special attacks impossible.)

Easiest? Probably the Daemon Prince in DoW... does that count?

Easy:
Evrae Altana - Final Fantasty X. He's a zombie. 2 phoenix downs, and he's dead. Considering how the first boss fight against him was, it was a real disappointment.
Yu Yevon - Also Final Fantasy X. I know its the climax, but giving infinite Auto-Life does not an epic battle make.

Hard:
Ares - God of War. I don't know why, but fighting him with that useless blade was just hopeless on the harder difficulties.
Vergil - DMC3. Enough has been said already.
Singularity - Syphon Filter: Dark Mirror. It's hard enough taking him down when he's wearing a bullet-deflecting suit, it's even worse when he's throwing tonnes of guards at you and taunting you about your past deeds

Easy: Every boss fight in God of War.

Every boss fight with Nero in Devil May Cry 4. Seriously, the Devil Bringer made that entire game so easy. Or at least until you had to play with Dante. Nero was much more fun to play as.

Del Lago- Resident Evil 4. It really shouldn't even be considered a boss fight, it was so easy.

Abyssion- Tales of Symphonia. While it did take a good 30 minutes or so to bring him down, he wasn't nearly as hard as everyone said he would be. Although pretty much the only way to beat him was to make sure that Raine was constantly using Revitalize every few seconds.

The final boss in Hitman Blood Money.

Hard: Flying Fox and King Bohan- Heavenly Sword. Actually, all of the Heavenly Sword boss fights were really hard.

Easiest Boss fight - Vulcan Raven in the M1 tank, 20 second fight flat..

Funny thing is, I found that the most difficult boss fight in the game. Or the most annoying at least. The rest are even easier.

Also, update for my hardest boss fight: End of level 2 on Ghost Squad, simply because (When playing at the arcade anyway) if you miss the head shot, it's game over. Stealing my fucking money for not hitting him in the head!

Easy - Pretty much any gym leader/elite 4 member in pokemon who can be defeated with ease if you've grinded your arse off.
But I spose that can be said for pretty much all bosses in any JRPG

Hard - Puppet Ganon (Legend of Zelda - Wind Waker). I dunno if anyone else found this guy hard, but I found him to be a right *****.
And also Manhandla and Onox from Legend of Zelda Oracle Of Seasons made me wear my ass as a hat for like a week.

Easy - Most bosses from the recent Legend of Zelda games.
I know this has been a must-pick in this thread, but Wind Wanker really annoyed the hell out of me. I breezed through the game on the first play with 5-6 heart containers and I didn't even die ONCE.

EASY: Also uhm, last boss on Crysis, the big insectoid-head thingie on the Aircraft carrier thanks to the Super-Duper-Ultra-Weapon-that-can-only-be-used-on-last-boss-bullshit.
What a freckin' disappointment.

Hard:
Any boss from Contra 3 or Contra 4.
They're gonna hand your ass to you.

Easy: big daddys from bioshock (i know not strictly a boss)-during the pre-production we were promised these tirants who would pound the living shit out of us so be careful where your shooting, their easy to take down in the first pleace (even on the hardest difficulty) but when you get the crossbow with the electic trip wires its allmost laughable.

Hardest: Boss battle mode on insane in SSBB, never gottern past 4 (dont even want to think about the thing at the end)

Portal's Glados was easy as pie, but that was a good boss fight though i have to admit Fontaine was piss weak.

Hardest boss... most of them in Dead Rising.
