What I love about IVAN is that it's virtually impossible to beat. This means that I'm rarely angry when I die, because I know it's going to happen anyway. It's a shame they've stopped updating it, though.

Also, a tip. If you happen to find the Holy Banana of Oily Orpiv, eat it. It will increase all of your stats, and it has a tendency to explode if you hang onto it for too long.

Age of Empires - I love the feel of the game, and it inspired my gaming passion.
Homeworld - it represents the nadir of story-focused strategy to date.
Skyrim - the closest games have come to date to one of my "perfect" ideals: the open world life sim.
Minecraft - is something special.
Nethack - mechanically effervescent. (Now there's a compliment for the ages!)
Risen - Evoked a sense of loneliness and total immersion.
Riven - This game was just beautiful.
King of Dragon Pass - Has a sense of place few designs can even approach.
Portal - 'Nuff said.
Immortal Cities: Children of the Nile - to date the ultimate expression of the City Builder form.

No particular order, just ones I remember enjoying the most. Decided to not include games from my childhood to avoid clusterfuck.

GTA IV -- Suck it, haters. The most fun I've had in multiplayer. With script mods.
Shin Megami Tensei: PERSONA 4 -- Very strong story and characters with nice dungeon crawling.
The Elder Scrolls IV: OBLIVION -- I was in awe the first time I played, and a long time after.
DIABLO II -- Addiction.
MAX PAYNE 2: The Fall of Max Payne -- Stylistically awesome; Remedy was still on board.
Mass Effect -- Refining storytelling in video games little by little.
Splinter Cell: Chaos Theory -- The high point of the series in my opinion. Such exciting fun.
Silent Hill 2 -- The sheer meaningfulness of every single little thing. One of a kind.
Dragon Age: Origins -- Didn't hold your hand all the time; story and characters are very solid.
Tie between NFS: Most Wanted & FlatOut: Ultimate Carnage for casual racing escapism.

It has occurred to me I have never thought about this before, hmm... guess I'll put 5 I know I would include in such a list, and maybe add an actual top 10 later if I can decide.
In no particular order:
Star Wars Knights of the old republic: A great RPG, nice story, characters, and I love the fact that fights between two swordsmen/Jedi/sith actually looks like a sword/light-saber fight. It has always baffled me that no other RPG with this type of combat(that I can think of) does this.
Arcanum: Of Steam-works and Magic Obscura: Great game, Great RPG. Simple.
Mount and Blade: Warband: This game is amazing, if you haven't played it, do so now, or I will find you, and I will kill you.
Hmm... I need more time to think about this, this is tough.
