Lets see Move or Wii do that ;)
Considering that the Natal (I REFUSE to call it "Kinect") is just the Eye-Toy with some new bells and whistles, it would be easy.
If by "new bells and whistles", you mean thousands of infrared points of light capable of 3D mapping an object as well as colour detection instead of just being a camera... yeah, other than that they're basically the same thing.
THAT is a new bell and or whistle.

Maybe you don't understand, but saying something has new bells and whistles, means its an upgrade.
Maybe you don't understand but "bells and whistles" is a cynical term used to deride an advertised product by being dismissive of the actual benefit of the additions to the product. By stating something has "all the bells and whistles" you are implying it is flashy, and little else.

There is a distinct difference between the mapping capabilities of the Kinect's sensors and cameras, and the Eyetoy camera. Your assertion that the Eyetoy camera could "easily" duplicate what the Kinect hacks have accomplished in the last two months is ill-informed. Your subsequent implication that the Kinect sensor is not a substantially more technically advanced than the Eyetoy camera is laughable.

If the Eyetoy camera could replicate effects the Kinect sensor has achieved, I ask you, where are all the interesting Eyetoy hacks?
Because where the Kinect took off, the Eye Toy didn't, there simply wasn't much of a market.

If you believe that, you're not ill-informed, just delusional. The eyetoy was effectively a webcam. Hundreds of millions of cameras like it exist attached to if not built into computers worldwide. The Kinect is far more than that. Please know what you're talking about before making such ridiculous claims.

"Serious hacking" includes hard-wiring two of the cameras together.
And an ir camera, ir lasers, laser range finding hardware and wireframe building software too no doubt.

Would it be possible to scan non people objects in? Like say... A building made of legos?
Yes, this would be possible. However, you still have to problem of the back not being captured and thus not included. If you adjust the program and use multiple kinects, it should be possible.
And lo, the secret to inventing the holodeck is revealed!
I know that was a joke, but it is actually the reason I won't bash innovations in gaming like the Kinect. Yes it is worlds away from turning into something like a holodeck, but all great things in the world of technology start with small steps, like the Kinect.

--------

I look at people that bash such technology as people that have something I like to call Early-Onset Old People Syndrome. When people that suffer from this condition encounter a new technology that could revolutionize life or recreation, they complain about it and say that what they have at the moment is just fine and should stay that way.

Ever here something similar to this when trying to get old relatives to use a computer, "I don't need this newfangled comput-o-matic or whatever you call it, I have a piece of paper and a pen that I can use just fine to write and send letters.", or "I get news from my newspaper; I don't need that gizmo.", or "Why would I want to watch videos on that contraption when I have a TV." Though before that it was, "Why do we need this television thing when we have a perfectly good radio."

When holodecks are finally invented, there will probably be people that are complaining that their Move-Plus-Kinector 1080 is just fine and holodecks are a fad.

Edit: Also, awesome new use for the Kinect, I can't wait till I have enough money to buy one with one of the new 360's.

So... If I wear all purple clothing, will I get a massive obsidian repository? What about red/yellow? The game considers lava a block, so will I have (for a few seconds) a lava statue? How about water statues? A tree statue would be cool...

Ya, it's kinda cool... but when you look closely, the statues are mostly blobby and nondescript. Not really detailed enough to look good up close.

First controlling WoW with kinect, now erecting monuments of glory in your own image? The world is changing, folks...

...Maybe kinect is not the evil we once thought it was?!

I like the idea, it looks kinda neat and awesome, but now I'm wondering, is it really necessary to use a Kinect to make such awesome monuments?, is it possible to use the program to just scan any image and make the game translate it in blocks?.

Also, I'm wondering if the thing considers depth, like the image with the stretching arm to towards the camera, does it translate well in-game?.

Aside from those questions, it looks pretty awesome.
Most certainly,

They both do actually but the Wii's is not essential and only used for one or two games.

I am always wondering what vivid Minecraft players will come up with.

I am too wondering what hackers could do with the Kinect.

Now that they are combined my life is complete.
