It's never gonna happen. The whole thing about light is that it goes off in all directions, I guess you could have a fucking powerful laser pointer, but that's about the extent of the power you would get. Anyway, I got off topic... maybe it can shoot laser beams from it's handle.. or something?

And if I shoot a Jedi with a metal bullet they'd get sprayed with molten lead...

....a short-beamed lightsaber ON a chain. That way you can use it from a distance, and you can control it more easily using the force. Think of a ninja kunai on a chain, but replace the kunai with a lightsaber. Or you could think of it as a Manriki or a Kusarigama (see wikipedia). Imagine how scary it would be to see one of those flying around your head mwahaha

Actually the technology is Laser captured within a plasma field. thus it can absorb other energy sources and not be like a laser pointer.

I think lightsabers integrated into other hand to hand weaponry would be cool, Wolverine-ish claws for example, or maybe some sort of brass knuckle/glove thing would be pretty badass.

Have it so that your super powered jedi can choose the shape of the blade not just the length, that way you can have the lightaxe as mentioned above as well as a light whip, light club or anything else you want.

OP: I'd look at Gundam for ideas beam claws, beam axes,beam polearms etc. Fpr a good variety try Gundam Wing, G Gundam, or Gundam 00.

If this character is so badass, then why not have a crapload of lightsabers orbiting him?
Alternatively, just a regular sword that he makes powerful by focuasing his force powers through it (I think hat was in KOTOR).... and have it disrupt the functioning of normal lighsabers..... or just make this guy the Jedi equivelant of Dr. Manhatten and blow people up with his mind and turn othwer peoples lightsabers in hotdogs.
I think I'm getting a bit carried away so I'll stop there.
