I was playing Final Fantasy X-2, and i went to fight Yojimbo, he used Zabtetsu, takes all Hp to 1, and MP to 0, and then quickly used an attack that hits all my party...

Not a boss, but those weak-looking enemies in the final dungeon that cast L4 Death to kill off your whole party while you only have one save point you of course spare for just before the final battle basically made me stop playing the game.
demyx from kingdom hearts 2 he has this one attack where he summons a bunch of water forms and you have to beat them in ten seconds or it`s insta-death and the death is`nt really explained you just get taken to the game over screen if you screw it up.
Contrary to the trend, I'm going to mention a character you CAN use in Final Fantasy X, but also can fight twice as a Boss (once to get him, another as a dark aeon boss): Yojimbo's Zanmato

Not really a boss but anyway, remember Hitman 2? When you go back to St. Petersburg to kill some general? You see him and a bunch of guys standing perfectly still in a conference room. Zoom in with your sniper rifle, line up your shot, BOOM!!! Headshot. Hes still standing. (One of my biggest wtf? moments in a game) Then you get counter sniped. Such a cheap move,"Here, have a distraction cause Im a sucky version of you". Im glad I killed that son of a *****.

Other thing is Shiro's Impossible Odds (I think) in Guild Wars. Double strike 80+ damage life steal on anyone anywhere near him everytime he got attacked or something stupid. He was like the only guy I could never ever ever kill without help. Hated him so much.
The Dark Demon's little spinning blade things. Not only do they do a fair bit of damage to you if they hit (even if you have armor), they turn any terrain they hit into a patch of spikes, making the battle that much harder.
Emerald weapon's super attack, no matter what it would hit 9999, you had to have phoenix with final attack to survive, otherwise, you were DEAD.

Mike Tyson's punch from the original Punch-out. He has one punch that will knock you down in one hit regardless if you have full health and you can't get up afterwords, so it's essentially a game over if you get hit. Also the only sign you get to know it's coming is that Mike slightly, very slightly glitches just before he throws it.
I didn't think Kefka was that tough, as long as you had a few guys Life3'd.
Some people mentioned Alexei from Ninja Gaiden 2... I always thought the fire guy was way cheaper, especially when you fight him the second time and he dunks you in the lava whenever possible. Also, and I don't want to spoil it for anybody, LOOK CAREFULLY before moving on after you finally finish him off. There is some cheap-ass afterkill waiting for the unwary ninja.
