EDIT: Forgot the most important Skill you have to have..Toaster Repair! If you know what i mean, you get a Cookie.
Fallout Equestria. Littlepip aka The Bullet-magnet.

Double chocolate chip please.

The best builds for NV and 3 generally have

one combat skill
one get into stuff skill
one extra

Combat skills
Guns is a no brainer, even if you want to stealth or talk your way across the wasteland pick this for when the going gets tough. The other weapon skills such as energy or unarmed require a more special "special" allotment, if you want to wale on everything at close range buff up Str and End. If you pefer to go "pew pew" a high Luck will boost the obscene crit rate of energy weapons, (and make a killing in the casinos.)

Opening doors
Lockpick or Science take your pick, Science will be more situational but also open more quest options.

The odd one out
This one can be anything you choose, I would recommend Speech or Repair to either talk your way out or keep your equipment from falling apart.

Swimming! wait... wrong game.

A weapon skill, a skill for opening locked doors (lock-pick or science), and medicine. Keep alive, keep the bad guys dead, and get as much loot as possible.

As the OP said - Small Guns, Medicine & Speech =P But Lockpick and Science are very useful too!

EDIT: Do people usually just choose a few skills and only focus on those? Ive been developing everything (aside from Unarmed) as Ive been levelling up my character in Fallout 3 =S

You only need three skills to kick ass:

Repair. Sneak. Small guns.

Throw in either science or lock pick and medicine and you're untouchable.

Sneak really is the skill to have in both Fallout 3 and New Vegas. Maybe it is just my play style, but I can't overstate how valuable it is.

Speech
lockpicking
science

.... I thought it was only me but this set-up seems quite popular!

I'd never Tag Guns, Big Guns, Energy Weapons, ect simply because they just aren't necessary early game and you're MUCH more likely to dump a few points in them each level anyways. I'd say the most important are Speech, Lockpick, Repair, and my "maybes" are Science and Sneak depending on what you're going for.

I always max conventional firearms first, than lock-pick, than repair.

Although sometimes I can't help but feel like I'm missing out on the most unique thing about the Fallout series, 50's style energy weapons.

I start by focusing three skils, but then branch out as I go along

Speech, Explosives, Medicine. I always tag Small Guns, Lockpick, Repair.

In F3, I never have to level up neither Big Guns nor Science. Everybody who has played it knows why.

Stealing. Get it to 100 as fast as you can, and you can hit max level in a few hours. Plus, hey, all the free weapons and ammo you'll ever need!
I always read your posts with the voice and speaking style of the great Hank Scorpio and it works out fantastically.

On note for the topic, I actually just started Fallout 3 and I've chosen Melee Weapons, Lockpicking and Speech.

For FO1 energy weapon is the most important skill.

A plasma pistol can be found early on and from then on it only gets better. The rats before that point can be beaten with some minimal points in small arms. Later in the game nothing beats a turbo plasma rifle.
On a first playthrough you may want to tag small arms and energy both. Speech is secondary.

FO2 is similar, but you'll want to tag small arms instead of energy weapons, because they come much later and the difference in stopping power is smaller.

FO3 is all about repair. Indirectly increases weapon damage, armor, carrying capacity and money from sales.
I'd have to agree.

The OP mentioned Speech but I only found that one really useful in New Vegas.

Guns, Speech and Barter. Science, Medicine and Lockpick are good secondaries to focus on.

I'm surprised this answer didn't come sooner. Sneak + highly repaired and skilled hunting rifle = lots of dead stuff.

I used the hunting rifle through the whole game.

Stealth and lock picking

These two can get you just about anywhere you may want to go, get you in there quietly, and can get you out of there rather fast when things start to go tits up. Also with stealth, no matter what weapons that you use you will always have that stealth attack extra damage. Also games like Fallout always seem to turn into a stealth-em-up for me, whether or not it is intentional.
