Any kinds of trivia or drinking games would probably result in a loss to the human, depending on the extent of Death's powers. For all we know, he can Akashic records at will and will say drinking games are fine as long as the drink passes through his jaw.
The ultimate game or Calvinball would succeed based on Death's irritation levels.
Any kind of physical games would probably result in Death's win because skeletons are usually resistant to physical damage in games and he has magic.
Unless you can card-count, I wouldn't play him in any card games, he probably cheats.
I would wonder how a staring match could possibly unfold.
OT: I would invent a multi-dimensional silent match, Grim Reaper can't win, I can only lose. Until I say a verbal word, we visit inhabited dimensions and I'm given enough protection so I don't burn instantly when we visit the Hell-like dimensions.

I might go for chess because playing chess with the Reaper is just badass. If I was desperate to live again then maybe pokemon? I know plenty of cheap tactics.
