As odd as it may seem, I would like to see Mickey Mouse. If you've ever played Magical Quest for the SNES (Capcom made a great game there), Mickey had the power to go behind a curtain and change outfits and powers. Using that, he could have 3 aspects to play as: 1)range-based: Sorcerer's Apprentice from Magical Quest using magical dust to do stuff (summoning brooms, water repulsion); 2)melee-based: Keyblade-Wielding Mickey from Kingdom Hearts II using the badassery on display there; and 3)mixed: Epic Mickey using that paint and thinner to do all sortsa stuff. I think it could be implemented well and the whole point of this franchise is to see beloved childhood icons beat the shit out of each other.
Personally I prefer to just put my own characters into SSBB. I'm working on Zant right now, and plan to do Scott Pilgrim next. The best I've seen in SSBB is someone put in Cloud, Shadow, and Viewtiful Joe. Really fun stuff.
