I couldn't tell if you were making a joke here with the (Don't know why) so if you are, I apologize for telling you something you already know.
The reason frost is especially effective against you is because it damages both health and stamina. So if you are a melee fighter, your ability to use power attacks are going to go away pretty quickly.

Unless it can kill me in 1 shot in a ranged manner, nothing poses a threat at all. Except the ward assholes. The ones that can just fire away at me with magic while they have a ward up. Fuck those guys. >> Literally the only thing that ever gives me trouble.
As Fire/Lighting mage I feel your pain. A dragon? No problem, 1/4 of mana gone and dragon is down. Ward fellas? I have 456 mana and still managed to run out on just one of them. That collage quest to recover the books that had a 6 of them within earshot of each other. I was 65 pounds lighter after that fight, all of that weight was potions and scrolls I used, about 20 reloads :I

Also, difficulty jumped after leveling 8 levels straight with smithing, alchemy and enchanting.

I guess the trolls are, but when I met the "golden claw" boss(I was level 3 or so), I got killed...three times
I then switched my shield for healing spell and kept a 'hit and run' strategy, and he eventually died. In conclusion, I believe that this game is beatable, as long as you're willing to adapt a little
This is absolutely what it is for me. Granted, I'm not really focusing on one attribute so I switch it up a lot. For example, I couldn't beat a random bandit leader, so i ended up sneaking up and killing him, instead of my usual hack-and-slashery

I personally really like it when you have randomly powerful people, because that makes going through every dungeon a little more exciting, and puts me more on my toes.

Mages are a pain in the arse, but nothing feels particularly unfair.

"especially those pain in the arse frost trolls.Encounter one of those at level 1 and you'll be pretty incensed."

Well... duh, they're in higher level areas.

The game can be somewhat unforgiving based on your build choices (particularly melee ones).

I focused on heavy armor, block, one-handed weapon and restoration. I was finding the game surprising challenging until I changed my focus on to enchanting and smithing. Turns out I needed more than just those primary skills and corresponding perks. The game certainly isn't easy...but I feel like the challenge is manageable.

My friend on the other hand is playing a Destruction mage and finds the game to be very easy so far. I get the feeling ranged focused builds are the games unspoken easy mode.
I was focusing mainly on archery, whilst a friend of mine was a balls-out warrior, and he was finding things easier than me to begin with. It depends on a lot of things.

I think they're underpowered actually...I play a Khajiit and my claw attacks have for the most part been able to kill most of my enemies in no more than 3 hits (except for mini bosses and those goddamn trolls)

I've had a bit of difficulty with balancing but it seems to be more my fault than anything else.
Charging head on into a horde of bandits isn't a good idea, obviously.
I think this form of gameplay is much more enjoyable.
In Oblivion, I could level entire masses of enemies with no problem using simple Destruction magic.

In Skyrim, I'm having to actually plan out attacks before I really strike.
That is so much more rewarding to me.
Planting a couple fire runes at exits, picking enemies off one by one with a bow and then destroy the remaining enemies head on.

Much more fun than Oblivion so far. Even Fallout 3 suffered from similar problems but I feel Skyrim reached a good balance.

Step one: Get yourself some nice ward spells
Step two: Get yourself a nice one-handed mace
Step three: Get yourself some kick-ass heavy armor
Step four: Kill everything that looks at you funny from behind that b-e-a-utiful ward.

I find it to be the opposite. I think most enemies in the game are underpowered, even on the highest difficulty setting. I am eagerly awaiting some mods to up my difficulty a bit.

I feel the level of difficulty on Adept in Skyrim is FAR FAR superior to the headache I got from Oblivion on default. I would go so far as to say it is just fine as it is, and though I myself did eventually take it down a notch I would be the first to say it was because my melee skill was lagging behind an overdeveloped sneak-and-snipe bow tactic that wasn't working on higher level enemies in areas I probably shouldn't have been daring to visit anyway.

Not really. There are certainly enemies that you just aren't strong enough to fight, and the game gives you a fair shake though in that regard. Every super strong enemy I have fought I have been able to kill. From Deathlords at level 10, (I still have that Ebony sword btw.. Thank you.) To Frost Trolls and other baddies. There is generally always a way to fight whatever you come across so long as you play smart and your not afraid to use your bow and cover.. Or run around and shout at them and get a few hits in before running away again. (Ala me and the Deathlords.)

Evil In Waiting was a hell of a tough quest that took me two or three hours because I was so underleveled. But I did it.

The dragons are really downright depressing. Of course, I'm a stealthy stabby archer type and as long as there's rocky cover and a lot of room to run around I don't really have much problem with them. My biggest problem with the enemies in the dungeon seems to be a huge lack of sound cues when you compare it to Oblivion - I could hear any enemies coming a mile off in that game, but with Skyrim the eye in the middle of my screen goes to Detected and I'm dead before I can even finish saying "WHERE?!"

As far as the actual difficulty in fighting them... I've had to abandon my close-range bow fighting from Oblivion because the enemies strafe a lot more but I don't mind that. Really, I think they're pretty well balanced for the most part, though I'm playing on the normal difficulty before I do an expert run. Maybe they'll kick my ass the second time around, dunno.

They're not overpowered, you're underleveled.

And really, if you're getting raped by bandit leaders, don't fight bandit leaders.

How to frosttroll at low level:

Summon a Flame Atronach (get the spell, it's good!) and let Flamey get agro. Then pew pew.

Trolls have to be flamed down one way or another.

No, not at all. I think they are way too weak, at least the dragons and regular humans (except maybe mages). As for the trolls, there's a book named "Slaying trolls" or "Killing trolls" or something which describes how to kill one.
Really? You find any other interesting books? I renember one in oblivion being called "The Lusty Argonian Maid" It made me laugh

You know that you can change the difficulty setting at any time in the options menu, right?
That said, I haven't had a problem yet on Adept. A game in which I never die is a game that's way too easy for me and I haven't died enough to get upset about it so...... I might go up a difficulty level if it doesn't get harder soon.
I agree with you in a sense, I'm a mage and I'm using apprentice level spells to literally fuck shit up, so I'd say it starts out hard and becomes progressively easier

Everything is too easy. I don't even block, I can down pretty much anything, dragons included, in about 5 seconds with my dagger and sword.

Not really. Tactics. And maybe a companion. More with the tactics if you don't have a companion.

And adjusting combat styles for different enemies. Bear tactics and frost mage tactics are wildly different things.
My friend I have one tactic against all of these enemies which works every time. Dual wielded firebolt with two fire upgrades.

Im playing a mage type character and I hate going against other mages because they keep using wards every time I shoot a spell and negates my dmg, so I use summons against them and they die in a couple hits. Try different things to overcome the challenge.

Im forward rolling through dungeons, swinging my knife like a mad man, and gutting everything in my wake with 30x crits.

I 1 hit dragons >.>; Overpowered? No. You just might be spreading yourself thin like i did on my first toon. I focused on everything under the blue moon and more, and died for it.
