And Alton Brown is more than a simple chef, he is a chemist, a cultural anthropologist, and an awesome guy. Never doubt his word on anything. He's like the less-vitriolic younger brother of Yahtzee, just focused on food rather than games. If you ever get the shot, watch "Good Eats."
