Dragons are just awesome. They're powerful to the point that they can be whatever they want to, which is a freedom which appeals to most people. Dragons are everything that humans admire and fear all roled up into one package. The title "dragonslayer" that was awarded to mythological heroes can only be fully understood when one understands the mythological nature of a dragon. "Dragonslayer" implies that a human defeated a beast with power and cunning approaching the level of a higher being. The mythological title "Dragonslayer" meant that a particular human had proven some kind of superiority over what could be considered a force of nature.
In fantasy, it could argued that the only thing that people like more than dragonslayer is a dragon tamer/rider/lord/master/whatever. This is because a dragon tamer did not destroy a force of nature, but instead made that force of nature a friend, an ally, a partner.
