I use non inverted for fps but inverted for flight-sims because with a flight sim I think of that as "forward" not "up" and with and fps I really think of it as "up.' It's the same controller either way, I know, but it's a matter of perspective.
People who like the inverted probably think of it like I think of flight sims.
I've played with inverted for as long as I can remember. The way I see it, is that I am not the faceless protagonist, but rather the 'pilot' of him/her, sitting inside the head. My room is the cockpit. Therefore, it makes much more sense to me to pull a stick down to look up.
Non-Inverted when on foot of in ground vehicles (car, motorbike, tank ect)
But in aircraft (Planes, Fighter jets, Spacecraft), Inverted seems more natural
But for helicopters, I tend to go Non-Inverted. Not sure why though.
