None of those work due to either NVE's not matching up, or in the case of Dark > Psy > Fighting, flat out immunitys being involved.
I understand the immunity issue, but I don't see what's wrong with the others
ROCK super effective against ICE which is super effective against GRASS which is SE against rock
FIGHTING is SE against ICE or ROCK, both of which are SE against FLYING which is good on fighting

They stay the same every game for the same reason that its almost always a rock gym in the beginning: because they teach the type effectiveness the easiest. They give the new players a variety in whats available, instead of just the normal types in the beginning routes of the game.

Correct me please if I am wrong, but didn't R/S give the fire starter a fighting subtype (Combusken/Blaziken) as well as give the water starter a ground subtype (Marshtomp/Swampert)? I'll concede that D/P was the first pair of games to have all 3 starters gain a subtype after evolving (Torterra - Grass/Ground, Infernape - Fire/Fighting, and Empoleon - Water/Steel), but R/S definitely started the trend of adding subtypes to starters' evolutions.

I managed to hack one of my old pokemon games so that I could choose pikachu as my starter pokemon
Maybe you should just do that
You can do that without hacking, you know. It's called Pokemon Yellow.

OT: As everyone else have said, Fire/Grass/Water works becuase of the rock/paper/scissors way they deal with each other.

For the Rock-Ice-Grass triangle, the SE's are fine, but Ice does normal damage to rock. It doesn't do "not very effective" damage. On the Fighting-Rock/Ice-Flying triangle, the SEs and NVEs match up, giving it viability, but Flying has never been used as a single type, outside of Arceus holding a Sky Plate. It has always been paired with some other type, usually Normal.

Guess who mine would be...
Scyther? ;D
You were close. Scyther would be in my top 10. Think more like a stag beetle. :)
Heracross?
Forgot Heracross was a beetle. Um... well, it has two things on it's head, instead of the one horn the Heracross has.
It also has a spiked vagina for a mouth.

R/S definitely started the trend of adding subtypes to starters' evolutions.
Isn't Charizard Fire/Flying? Venusaur is Grass/Poison too...

Johto is the only one where all of them are pure Grass/Water/Fire
Charizard is Fire/Flying
Venusaur is Grass/Poison
Blastoise is a turtle.

I see your point of it being the best triangle, but would it not be possible to change the mechanics a bit? You could even make a whole new element, like I don't know plasma or something. That would be cool.

Well, no, I never thought the fire/grass/water triangle was sacred or anything. I think it would be fun to mix it up a little. Why does it always have to be fire/grass/water? Why does it always have to be three starters? Sure, some might say for balance, but the idea of the game is to build a balanced TEAM, so in theory type wouldn't matter much once you got a few more select pokemon on your team. That's what I think anyway, I'm sure some hardcore competitive battler types would rip their hair out if their delicate equilibrium was disturbed. I say bring it on, Nintendo. Show us you have the moxxie to try something new every once in a while.

If you can find another balanced triangle like Fire, water, and grass, I'd have no problem.
Dark, Fighting, Psy
Water, Ground, Electric
Poison, Grass, Ground
Steel, Grass, Ground
Rock, Flying, Grass
Pikachu

I had thought of Fighting, Psychic and Dark until I realized that the imbalance of that is the Dark Pokemon is absolutely immune to Psychic attacks. While it won't affect much in the beginning, it feels a lot cheaper when you actually start learning the good moves and have to remember your Rival's Poochyena is going to whip your Kadabra's ass any day (best analogy I can give for lack of knowing what's in Gen V) but at least your boy/girlfriend will kick Poochyena's ass with Machoke. Which really isn't all that relieving.

It should remain the same. The whole point of the triangle is to introduce the new players to the basics of typing. It is the simplest triangle, and the easiest to remember. It helps new players get used to the idea that some pokemon will always be at a disadvantage to others.

Incidentally, FlyingRock Works, but that's needlessly complicated and obtuse for a new player. I've still yet to hear a decent argumeent as to why flying is good against fighting, from a logical perspective.

Then why is water weak to grass? If you throw water on a fire, the fire goes out. If you set a plant on fire, it will burn up. If you toss leaves in a puddle? lolwut?
