I mostly use 1st person, but switch to 3rd for conversations and, if I see them coming, those brief, cutscene-like occasions when I can control the camera but not my character (such as when talking to daedra etc.) I like to keep both participants in view if possible.
Also, right before I save my game, I find it useful to switch to 3rd person and swing the camera around to face my character first. That way, the save file picture becomes a portrait of my character. I tend to have several separate playthroughs going at once, with different characters, and this is a great way to quickly tell the various save slots apart!
