Uncharted 1 & 2

They're awesome games - it feels like you're playing an Indiana Jones movie (one of the first 3).

MOD NATION RACERS! it's LBP with cars and weapons, it's awesome.

Also download fat princess.

MGS is a great game, alot of installing and alot of (skipable) cut scenes though.

EDIT. alot of people saying infamous, I think it's a marmite game ... you either love it or hate it, I am a hater.

Just looks slow compared to prototype and you look like your waving/pumping your fist at people instead of attacking them. Also, electric grenades, think about that ... You throw a ball of electricity which then explodes, ummm what?

If you want to be an over the top super hero get prototype, infamous just isn't insane enough.

InFamous and Ratchet & Clank are the ones I'd say are essential playing for the PS3.

Save room on your shelf for Mass Effect 2 next January!

In the meantime, work your way through Infamous, Heavy Rain, LittleBigPlanet, Demons' Souls, Trine...

Saints Row 2, the Sly Cooper collection (when it's out), 3D Dot Game Heroes, and Katamari Forever were all good on the PS3.

My favourite PS3 games are;
Demon's souls, a brilliantly crafted action-rpg, very challenging and rewarding.
InFamous, a great open-world game with a nice premise and great gameplay.
LittleBigPlanet, this should really be on everyone's list.
God of War 3, epic ending to a great series.
Uncharted 1 and 2, perhaps my favourite action-adventure games of this generation.
Killzone 2, besides the amazing visuals, Killzone 2 is a very satisfying fps with very polished mechanics a great feel.

Metal Gear Solid 4, Heavy Rain (not amazing, but you won't have played anything quite like it) and FFXIII.
This, and add Uncharted 2. All these games are very good, and all different enough to satisfy anyone.

Valkyria Chronicles (that's where my avatar's from btw XD), Heavy Rain, InFamous, Metal Gear Solid 4 and Resonance of Fate (if you're feelin' tactical and/or masochistic).

All great games that I play a LOT ^_^

And, well, IF you know someone well that has a PS3 and Little Big Planet, then that. Personally I haven't bought it because I doubt I'll be able to enjoy it alone.

Oh, and also, go see if you can't find demos of games on PSN, I got a shitload of demos to decide if I want the game or not. It's REALLY helpful (at least for me)

They've all been said, but I must emphasize these.

Little Big Planet, for the great platforming, amazing level editor and overall fun in a game.

Heavy Rain, to play the game that Indigo Prophecy should have been, and to get an experience that absolutely no other game has.

Flower, for one of the most unique and enthralling indie experiences available.

Disgaea 3, if you like those types of isometric turn-based tactics RPGs. (And get Disgaea 1 and 2 if you have a Backwards Compatible PS3).
