If you mean make it so the computer doesn't display a GUI when you log in, and instead just has a terminal CLI...well that's kinda out of my knowledge, you'd be best off asking on the Ubuntu forums for that.
[edit: And you'd be mad to not want ANY kind of GUI on your first foray into Linux. It's a 'geek OS' for a reason you know.]
