It's another BONES animated show, so it's absolutely gorgeous to look at. With a very well done dub, too. The setting is rather inventive, with a society of super-powered "contractors" who have to pay a unique price every time they use their powers.
Great action scenes. Good characters. Good plot. Very emotional around the end. Watch it. It's one of few anime that are actually good. It's really a must watch, but lower your expectations for season 2 considerably.

I also recommend the first few arcs of One Piece, but be sure to look up what's filler, so you can skip that shit, and look up the character side stroies from the manga covers. After you've seen the amazing Drum Island arc, read the manga, because the anime starts going to shit in the next arc. The manga only keeps getting more awesome, even after 14 years.

Also Hajime no Ippo has pure awesome fight scenes and nice humor.

Instead of making a serious recommendation here, I'm just going to say Detroit Metal City [http://en.wikipedia.org/wiki/Detroit_Metal_City]. It's certainly worth a giggle or two.
Also, if you're any sort of gearhead or racing fan, Initial D [http://en.wikipedia.org/wiki/Initial_d]... not the greatest anime, but it's some nicely technical racing fiction, not your usual Fast and the Furious tripe.

Favorite anime, coming from a guy who's admittedly not THAT into anime.

It's the most gorgeous anime I've ever seen, number one, the soundtrack (by the band The Pillows) is fantastic, it's easily digestible, only about what? Six episodes? It's absolutely insane, but that's okay. I should also let you know I'm a huge David Lynch fan so I've got a fairly high tolerance for insanity.

It feels like something Grant Morrison might have done if he were into anime. It's got this great punk rock aesthetic and feel. Just great all around.

Also have to add this, while some aspects of the show are hard to follow, deep down at it's basic level it's a fairly followable coming-of-age story.

Oh oh also the dub is literally the perfect dub.

and I want a yellow Vespa.
