I can't see why they had to get rid of Vvardenfell, but that said, it isn't exactly GONE is it? It's less hospitable and it's been covered in spots of magma and ash.
Now I propose to you this;
The game ES:V will supposedly be set quite some time in the future, to compensate for the events of the fourth installment. Even if the population had been vacated, ash doesn't last forever, and the whole volcano thing sounds to me like an excuse to re-construct the land masses. Could this be an indication that we'll be seeing more of a NEW Vvardenfell?
Even if not, since this is just speculation, I was never fond of that place anyway. Looked too drab for my tastes- let's have another visit to the Gods realms!
