I love Roguelikes. LOVE LOVE LOVE them.
Favorites would be Binding of Isaac, FTL, Risk of Rain, and Spelunky.
There are quite a few others that are in alpha/beta versions that are still pretty fun to play. Cavern Kings being one I'm keeping my eye on, as well as the amazing Crypt of the Necrodancer. I think Nuclear Throne is still in progress as well.
Roguelikes are games where I can just sit down and start playing. Their gameplay is tight, and most of the time they don't change. The difficulty is the same, the only thing that changes is you by improving.
